Operation & control

Front Access To All Functions

Because the air flows from the bottom upwards, no ventilation clearances are required around the unit. An important advantage for anyone who does not have large areas available. - The air filter is located at the front, which makes cleaning and maintenance easier. - Any condensation is channelled into the drip tray, which is located at the front and can easily be removed. - The mains switch at the front is positioned so that it is not visible but easy to operate, meeting both design and accessibility requirements.

Self-service mode

The versatile use of the Giotto 12 is made possible by standard features such as the self-service lever and INCODIS 3.0 technology, which enable the self-service function. When this function is activated, the monitor becomes an image and video display and free operation can take place in complete safety.

INCODIS 3.0

The large and elegant 7-inch touchscreen display is easy to operate thanks to state-of-the-art technology. Intuitive, multilingual icons and the ability to switch between screens by swiping up and down make operation intuitive and immediate.

Tutorials

The Giotto 12 provides all the support required for correct use. With the video tutorials on the screen, every operating procedure can be carried out correctly and very easily.

Level sensor

The level sensor continuously monitors the amount of mix in the hopper, ensuring uninterrupted production and consistent quality. It has two warning levels: the first warns when the mix is almost used up and also shows the number of portions still available; the second signals when the mix has been used up completely, preventing incorrect dosing and protecting the machine.

Portion counter

Monitoring and evaluating operations is accessible to everyone thanks to the clear presentation of production data.

Performance & production

Automatic return system

After each dispensing operation, the lever automatically returns to its starting position to prevent it being left open by accident. Every detail is designed for safety and efficiency.

Cooled hopper

Reliability means constant control of the production parameters; the cooled hopper keeps the temperature of the mix at 4 °C and therefore within the safety limit. If the hopper temperature measured by INCODIS deviates from the actual temperature, the reading can be calibrated.

Removable Extruders

Attention to every detail during the construction phase simplifies all daily cleaning and rinsing procedures. One example is the removable star.

One Machine, Many Products

With the Giotto range, anything is possible. Each machine produces different types of ice cream in terms of consistency, temperature and overrun.

Extruders In Different Shapes

The dispensing block is equipped with 3 differently shaped extruders so that the ice cream can be served in the desired shape.

Direct Expansion Cylinder

Thanks to efficient heat conduction, it guarantees faster cooling of the mix, which benefits the very fine "snowflake" structure of the ice cream and enhances flavour perception.

Cylinder Volume

The Giotto 12 produces up to 11 portions per minute and 30 kg per hour, with the option of dispensing up to 1 kg in a single extraction, ensuring short recovery times and consistent product quality.

Dosing valve

The flow of the mix and the air in the cylinder uses the principle of gravity, and the choice of feed tube makes it possible to achieve the desired production capacity.

Magnetically Driven Mixer

The stirrer in the hopper ensures an even mix, increases cooling efficiency, guarantees a constant temperature and prevents the mix from separating. It is built without joints, which reduces the risk of bacterial contamination.

AWB beater

The geometry of the beater ensures minimal impact on the ice cream while preserving its structure. Its shape also improves the mixing process during the overrun phase.
